Creamy Raw Vegan Caramel ‘Cheesecake’

This cake is sensational, delicious, and amazing. It’s great on a hot day, served chilled. My kids adore it! Enjoy!

Almonds and cashews provide protein and healthy fats that are anti-inflammatory, and help keep you satisfied. The nuts also provide a creamy texture that replaces dairy for those that are dairy-free. While cheesecake (even this nutrient-dense version!) isn’t something to be eaten regularly, this is a great way to satisfy your sweet tooth because it's so nutritious!

Creamy Raw Vegan Caramel ‘Cheesecake’

  • Prep Time: 10 min
  • Cook Time: 1-2 hours (freezer time)
  • Servings: 12

Ingredients

For the base:

2 cups almonds (raw)

1/2 cup unsweetened shredded coconut

8 tablespoons coconut oil (melted)

4 tablespoons rice malt syrup

 

For the salted caramel filling:

3 cups cashews

1 1/2 cups coconut milk

1 1/2 cups medjool dates (softened in water)

2/3 cup coconut oil (melted)

1 1/2 teaspoons fine sea salt

1 teaspoon maca powder (optional)

Instructions

For the base:

  1. Add the almonds to a food processor and pulse until finely chopped.
  2. Add the rest of the ingredients and process until combined.
  3. Press the base into a springform tin, with the bottom of the tin lined with baking/parchment paper. Once firmly pressed, place in the freezer to set.

 

For the filling:

  1. Add all ingredients into a blender and pulse till smooth.
  2. Pour the mixture on top of the set base and freeze again until firm.

 

Suggested Pairings:

Drizzle top with melted chocolate
