Going through chemotherapy treatment for cancer is one of the most harsh experiences the human body can go through. This is one of my healing recipes that I developed to support me during this difficult process.

When going through treatment for cancer (and when you’re healthy, too!) it is important to eat the most nutrient-dense foods you can. Not only are sweet potatoes delicious, they are loaded with vitamins (A, C, pantothenic acid and B6) and minerals (manganese, copper, potassium) to provide you with the necessary building blocks to support your immune system.

Easy 4-Ingredient Sweet Potato Pudding

Ingredients

2 cups water

1-2 sweet potatoes (chopped into small cubes, skin on)

2 tablespoons maple syrup

¼ cup almond milk

sea salt to taste

cinnamon for garnish

Instructions

  1. Bring water to a boil and add sweet potatoes, cooking until slightly soft.
  2. Drain and mash potatoes.
  3. Stir in maple syrup, almond milk and salt.
  4. Garnish with cinnamon.

    Your picture makes it look like the potatoes were peeled. Do you really leave the skin on? If so, how do you avoid big flaps of skin in your pudding?
