I love this dressing over fresh garden greens! Its refreshing, creamy, and just the right amount of tangy flavor. If you don’t have buttermilk, you can substitute it with yogurt mixed with water until it reaches the consistency of buttermilk

Making your own salad dressing is easy and inexpensive, and you have full control over the flavors and ingredients. Emilie's recipe is lower in fat and calories than most creamy dressings, as it uses buttermilk (or her alternative suggestion of yogurt) instead of mayonnaise or cream for flavor and body. Dijon and red wine vinegar add tang, lemon juice adds zip, and fresh chives brighten it all up. Serve chilled over salad greens, with fresh vegetables to dip, atop grilled fish, or even as a marinade for meats.

Ingredients

2 teaspoon dijon mustard
2 tablespoons red wine vinegar
sea salt
⅓ cup olive oil
⅓ cup buttermilk
freshly ground black pepper
1 tablespoon lemon juice
chives (chopped, to garnish)

Instructions

  1. Whisk all ingredients together, drizzling in the oil slowly as you whisk to create an emulsified dressing.
