Healthy Chicken Salad

I learned this recipe at a healthy cooking class at Hy-Vee during my dietetic internship a few years ago. I fell in love with it and it has since become one of my favorite lunch options. I love to eat this chicken salad on whole wheat bread, with whole grain Triscuits, or even by itself! I added some slivered almonds to the recipe for some added texture and crunch.

Healthy Chicken Salad

Ingredients

12 ounce can of 98% fat free white chicken breast (I usually use canned chicken because it’s easy to keep on hand, but you can also used 12 oz of chicken cooked & shredded)
6 ounce Chobani plain Greek yogurt
2 tablespoons Mrs. Dash Ranch dressing mix (or any store-brand dry ranch dressing mix if you can’t find Mrs. Dash – it can usually be found at Hy-Vee)
½ cup of grapes (cut in fourths-I like to use both green and red grapes to add color!)
1/3 cup slivered almonds (optional – but I love the extra crunch!)

Instructions

  1. Place chicken in a large bowl (drain first if using canned chicken).
  2. Use a fork to shred chicken.
  3. Add in yogurt and dressing packet and mix until incorporated.
  4. Mix in grapes and almonds.
  5. Enjoy with whole wheat bread or crackers!
