No-Bake Four-Ingredient Granola Bars

This recipe came out of the need to use up a bag of gluten-free rolled oats that I had purchased to make overnight oats. After several attempts, I honestly didn’t like overnight oats, so I wanted to find a recipe that could be whipped together easily whenever I needed a snack, or wanted to share a delicious, healthy treat with friends and co-workers. This recipe can easily be modified to your personal preference by adjusting amounts and ingredients. The figs provide just enough sweetness, and the chopped walnuts give it a crunchy texture to satisfy the need for something delicate and substantial at the same time.

The chewiness of oats has such a comforting quality. Beta-glucan, a type of soluble fiber found in oatmeal, has been shown to promote greater feelings of fullness than other grains, making a batch of these simple bars a no-brainer, especially for busy mornings. Walnuts provide a subtle crunch and have been shown to provide a bit of a cognitive edge! They contain alpha-linolenic acid, which is an essential omega-3 fatty acid and other polyphenols that may prevent memory loss. To enhance the flavor, toast them first before adding to the granola bars. Figs have been valued from biblical times with three, easy-to-find fresh or dried varieties (black mission, brown turkey, green calimyrna). Just a handful of dried figs have been shown to increase antioxidant plasma levels for 4 hours!

No-Bake Four-Ingredient Granola Bars

Ingredients

14 dried calimyrna figs

1 cup gluten-free rolled oats

2 heaping tablespoons of almond butter

½ cup walnuts (chopped)

Instructions

  1. Add dry figs to a food processor and blend until a paste forms (2-3 minutes).
  2. Add oats, almond butter, and chopped walnuts to a bowl. Add fig paste to the bowl and blend ingredients until well mixed (using your hands works best).
  3. Line a 9×9 cake pan with parchment paper, add mixture to cake pan and press down.
  4. Cover cake pan with plastic wrap and place in freezer for 15 minutes.
  5. Remove pan from the freezer and cut using a sharp knife into 10 bars.
