Raw Vegan Matcha Cheesecake

Ingredients

Crust
2 cups of raw almonds
1 cup of soft medjool dates, pitted

Filling
3 cups of cashews (soaked overnight and rinsed)
½ cup lemon juice
⅔ cup raw agave syrup
¾ cup extra virgin coconut oil, liquified
1 tablespoon matcha powder or Mindful Matcha
1 teaspoon pure vanilla extract
pinch of sea salt

Chocolate Topping
1/4 cup coconut oil, liquified
1/4 cup cacao powder
1 teaspoon vanilla paste
2 tablespoons pure maple syrup

Instructions

  1. In a food processor or blender, pulse the almonds and dates until they become a sticky consistency.
  2. Press the base mixture into the bottom of a springform cake pan firmly
  3. Set in fridge.
  4. Blend all filling ingredients until smooth and creamy.
  5. Pour onto crust and spread evenly.
  6. Put in freezer for at least 4 hours or preferably overnight.
  7. Take cake out of spring-form pan
  8. Make the chocolate sauce by combining the ingredients until smooth in a small bowl or blender.
  9. Pour over the cheesecake and smooth over the top.
  10. Store in the fridge or freezer.
