I love the combination of spinach and sun dried tomatoes with olives in a salad. Spinach is high vitamin K and vitamin A. These two vitamins should included into daily meals to help fight off diseases.

Spinach and Sun Dried Tomato Salad
1 cup baby spinach
5-7 baby carrots (diced)
half an avocado (diced)
7-8 medium sized black olives
3-4 sun dried tomato’s (not packed in oil)
juice of half a lemon
1 tablespoon extra virgin olive oil
- Chop all ingredients expect for the spinach.
- Toss with the lemon juice and EVOO.
- Serve and Enjoy!
