I love the combination of spinach and sun dried tomatoes with olives in a salad. Spinach is high vitamin K and vitamin A. These two vitamins should included into daily meals to help fight off diseases.

Sandra's spinach and dried tomato salad allows you to eat the colors of the rainbow which comes with a hefty dose of vitamins and minerals. Spinach is naturally low in calories and is packed with manganese, magnesium, iron, copper, vitamin B2, B6, calcium and potassium which protect skin, hair, and bones. The orange color in carrots is from Vitamin A which aids in eye health. Avocados contain both alpha-linolenic, an omega-3 fatty acid which is found in fish and oleic acid. Omega-3s have been proven to lower elevated triglyceride levels which reduce risk of cardiovascular disease, type 2 diabetes and high blood pressure.

Spinach and Sun Dried Tomato Salad

Ingredients

1 cup baby spinach
5-7 baby carrots (diced)
half an avocado (diced)
7-8 medium sized black olives
3-4 sun dried tomato’s (not packed in oil)
juice of half a lemon
1 tablespoon extra virgin olive oil

Instructions

  1. Chop all ingredients expect for the spinach.
  2. Toss with the lemon juice and EVOO.
  3. Serve and Enjoy!
