During the summer, this is one of my favorite drinks to make. It is cold and refreshing and really quenches your thirst. Plus, it’s a cinch to make, so you can stay hydrated and satisfied on the hottest summer days.

This strawberry watermelon slushee is a throwback to my childhood. When I was a kid, my mom would make this for us after we had been out horseback riding on a hot summer day. Every time I taste it as an adult, I am magically transported back to being a child. Nothing like fond memories to get you through from time to time!

When it comes to gelatin, you don’t want any old gelatin off the supermarket shelves. You want to look for 100 percent grass-fed gelatin from healthy animals. Just like other animal products, quality is important

Simple Strawberry Watermelon Slushee (Dairy-Free, Autoimmune-Friendly)

Ingredients

3 cups cubed watermelon
1⁄2 – 3⁄4 cup of seltzer water
1+ 1⁄2 cups frozen strawberries
1 tablespoon cold-soluble grass-fed gelatin (see note above)
5 drops of liquid stevia

Instructions

1. Put the watermelon and seltzer water in a high-powered blender and blend until combined.
2. Add stevia, gelatin, and frozen strawberries and blend until smooth.
3. Serve immediately.
